Mango Pudding
A smooth, chilled pudding made from ripe mango with a touch of cream.

Ingredients
- 2 ripe mangoes, pureed
- 1/2 cup sugar
- 1 cup water
- 2 tsp gelatin
- 1/2 cup evaporated milk
- 1 tbsp lime juice
- mint for garnish
Method
- Bloom the gelatin in a little cold water until softened.
- Heat the water with sugar and stir in the gelatin to dissolve.
- Blend in the mango puree, evaporated milk, and lime juice.
- Pour into molds and chill until set, then garnish with mint.
