Ingredients

  • 1 lb chicken thighs, diced
  • 1/2 cup roasted peanuts
  • 8 dried red chiles
  • 3 tbsp soy sauce
  • 1 tbsp black vinegar
  • 1 tbsp sugar
  • 2 scallions, sliced

Method

  • Toss the chicken in a little soy and cornstarch and sear it hot.
  • Fry the dried chiles in oil until fragrant but not burnt.
  • Add the chicken back with the soy, vinegar, and sugar sauce.
  • Stir in the peanuts and scallions and toss until glossy.
