Kung Pao Chicken
Diced chicken stir-fried with peanuts and dried chiles in a tangy spicy sauce.

Ingredients
- 1 lb chicken thighs, diced
- 1/2 cup roasted peanuts
- 8 dried red chiles
- 3 tbsp soy sauce
- 1 tbsp black vinegar
- 1 tbsp sugar
- 2 scallions, sliced
Method
- Toss the chicken in a little soy and cornstarch and sear it hot.
- Fry the dried chiles in oil until fragrant but not burnt.
- Add the chicken back with the soy, vinegar, and sugar sauce.
- Stir in the peanuts and scallions and toss until glossy.
