Tom Yum Soup
A hot and sour shrimp soup with lemongrass, lime, and chili.

Ingredients
- 1 lb shrimp
- 4 cups stock
- 2 stalks lemongrass
- 3 lime leaves
- 1 cup mushrooms
- 3 tbsp lime juice
- 2 tbsp fish sauce
Method
- Simmer the stock with bruised lemongrass and lime leaves.
- Add the mushrooms and chili paste and cook briefly.
- Drop in the shrimp and cook until they curl and turn pink.
- Finish with lime juice and fish sauce off the heat.
