Ingredients

  • 1 lb chicken, sliced
  • 3 tbsp green curry paste
  • 1 can coconut milk
  • 1 cup bamboo shoots
  • 1 tbsp fish sauce
  • handful Thai basil
  • 1 tsp sugar

Method

  • Fry the green curry paste in a little coconut cream until fragrant.
  • Add the chicken and cook until it turns opaque.
  • Pour in the rest of the coconut milk, fish sauce, and sugar.
  • Add the bamboo shoots and Thai basil and simmer briefly.
