Thai Green Curry
A fragrant coconut curry with green chili paste, chicken, and Thai basil.

Ingredients
- 1 lb chicken, sliced
- 3 tbsp green curry paste
- 1 can coconut milk
- 1 cup bamboo shoots
- 1 tbsp fish sauce
- handful Thai basil
- 1 tsp sugar
Method
- Fry the green curry paste in a little coconut cream until fragrant.
- Add the chicken and cook until it turns opaque.
- Pour in the rest of the coconut milk, fish sauce, and sugar.
- Add the bamboo shoots and Thai basil and simmer briefly.
