Pad Thai Noodles
Stir-fried rice noodles with shrimp, egg, and peanuts in a sweet-tangy sauce.

Ingredients
- 8 oz rice noodles
- 8 oz shrimp
- 2 eggs
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 2 tbsp palm sugar
- 1/4 cup crushed peanuts
Method
- Soak the rice noodles until pliable, then drain.
- Stir-fry the shrimp and push them aside to scramble the eggs.
- Add the noodles with the tamarind, fish sauce, and sugar.
- Toss until coated and finish with crushed peanuts.
