Method

  • Trim the brisket and coat it in a heavy salt and pepper rub.
  • Smoke at 225F until the bark sets and the color deepens.
  • Wrap in butcher paper and continue until probe-tender.
  • Rest the brisket for an hour before slicing across the grain.
