Thai Coconut Pudding
A soft, lightly sweet steamed pudding with a salty coconut cream topping.

Ingredients
- 1 cup rice flour
- 1.5 cups coconut milk
- 1/2 cup sugar
- 1/4 tsp salt
- 1/4 cup cornstarch
- 1/2 cup water
- 1 pandan leaf
Method
- Whisk the rice flour, water, and sugar into a smooth base.
- Pour the base into small cups and steam until set.
- Cook the coconut milk with salt and cornstarch into a thick topping.
- Spoon the salty topping over the set pudding and chill.
