Massaman Beef Curry
A mild, rich curry of beef and potatoes with peanuts and warm spices.

Ingredients
- 1.5 lbs beef chuck, cubed
- 3 tbsp massaman curry paste
- 1 can coconut milk
- 2 potatoes, chunked
- 1/4 cup peanuts
- 2 tbsp fish sauce
- 1 tbsp tamarind paste
Method
- Fry the massaman paste in coconut cream until fragrant.
- Brown the beef in the paste, then add the rest of the coconut milk.
- Add potatoes, peanuts, fish sauce, and tamarind.
- Simmer slowly until the beef is tender and the sauce is rich.
