Ingredients

  • 2 cups basmati rice
  • 1.5 lbs chicken thighs
  • 1 cup yogurt
  • 2 onions, sliced
  • 2 tbsp biryani masala
  • 1/4 cup fried onions
  • pinch of saffron

Method

  • Marinate the chicken in yogurt and biryani masala for an hour.
  • Fry the onions until deep golden and partially cook the rice.
  • Layer the chicken with rice and saffron in a heavy pot.
  • Cover tightly and steam on low until the rice is fluffy.
