Method

  • Whisk the yolks and sugar over a water bath until pale and thick.
  • Fold in the mascarpone, then the softly whipped cream.
  • Dip the ladyfingers in espresso and layer them in a dish.
  • Spread the cream over the layers and dust with cocoa before chilling.
