The secret to a great bibimbap is not the toppings -- it is the crackle of rice at the bottom of the bowl.
Everyone fixates on the rainbow of vegetables, but the soul of bibimbap lives at the bottom of the bowl, where the rice meets hot metal and turns golden and crisp. To get there you need a heavy vessel that can take real heat, a thin film of oil, and the patience to leave the rice alone. Press a layer of cooked short-grain rice into a hot, oiled pan or stone bowl and resist the urge to stir; that stillness is what builds the crackly crust the Koreans call nurungji.
Treat your toppings as a set of contrasts rather than a pile of color. You want something cool and raw, like julienned cucumber, against something warm and earthy, like sauteed shiitake; something pickled and sharp against something rich, like a runny egg yolk. Season each component on its own with a little sesame oil and salt so that no single bite tastes flat, then arrange them in tidy wedges so diners can mix exactly as much as they like.
The final move is the sauce, and a good gochujang dressing makes or breaks the dish. Loosen a spoonful of gochujang with a splash of rice vinegar, a touch of sugar, toasted sesame oil, and a little water until it pours but still clings. Add it in stages as you mix so the rice carries the heat evenly, scraping up that crisp bottom layer as you go. Done right, every spoonful has crunch, warmth, freshness, and fire all at once.
